INGREDIENTS
Dough
- 🥚 1 large egg
- 1 teaspoon vegetable oil
- 🧂 1 teaspoon salt
- ¾ cup warm water
- 3 cups all-purpose flour
- 1 tablespoon all-purpose flour for dusting
Filling
- 🥩 18 ounces ground beef
- 🧅 1 small onion, chopped
- 1 ½ tablespoons ice-cold water
- 🧂 1 tablespoon coarse salt
- Freshly ground pepper to taste
STEPS
Combine egg, oil, and salt in a measuring cup; add warm water to fill 1 cup. Knead together with flour until smooth and elastic. Cover and rest for 30 minutes.
Mix ground beef, onion, ice-cold water, salt, and pepper thoroughly for the filling.
Dust a baking sheet with flour and set aside.
Roll out a portion of dough very thinly, cut rounds, fill, fold, and pinch into crescent shapes. Place finished dumplings on baking sheet. Repeat and freeze for 30 minutes.
Simmer frozen pelmeni in lightly salted water until cooked through and floating, about 10 minutes. Serve hot with sour cream or vinegar.
