INGREDIENTS
Noodles
- 2 frozen udon noodles
Canned Fish
- 100g canned saba (mackerel)
Vegetables
- 1/3 stalk green onion
- 1/4 cucumber, julienned
- 1 myoga, thinly sliced
- 2 shiso leaves
Seasoning
- 60cc concentrated soy sauce base
- 240cc soy milk
- To taste white sesame seeds
- To taste chili oil
STEPS
Slice the green onion into thin strips, julienne the cucumber, and thinly slice the myoga.
Mix the concentrated soy sauce base and soy milk in a bowl and chill in the refrigerator.
Boil water in a pot, cook the udon noodles according to package instructions, then rinse with cold water and drain.
Place the noodles in a serving bowl, top with shiso leaves, canned saba, green onion, cucumber, and myoga, then pour the chilled soy milk mixture over.
Sprinkle white sesame seeds and drizzle chili oil to finish.
