Wash the sweet potato thoroughly without peeling. Slice into 7mm thick rounds and soak in water for 5 minutes. Drain the water.

Cut the mackerel into 6 equal pieces. Season with salt and pepper, dust with flour, and wrap each piece with a shiso leaf. Coat in flour, beaten egg, and breadcrumbs in sequence.

Heat vegetable oil in a pot to 170°C, filling about 2cm deep. Fry the sweet potato slices for about 10 minutes, flipping occasionally, then remove. Fry the mackerel pieces for about 4 minutes, flipping until golden brown.
