INGREDIENTS
Fish
- 🐟 2 fillets of mackerel
Vegetables
- 1/2 bag of bean sprouts
- 🥕 1/3 carrot, julienned
- 1/3 bunch of chives, cut into 3cm pieces
Seasoning
- cornstarch as needed
- 1 tbsp salad oil
- 1 tsp grated ginger
- 1 tbsp sake
- 1 tsp soy sauce
- 💧 200cc water
- 1/3 tsp chicken stock powder
- 1 tbsp sake
- 1 tbsp mirin
- 🍬 1 tsp sugar
- 1 tbsp black vinegar
- 2 tbsp soy sauce
- 1 tbsp cornstarch
- 💧 1 tbsp water
STEPS
Remove bones from mackerel and cut into bite-sized pieces.
Mix the marinade ingredients (ginger, sake, soy sauce) in a bowl and add the mackerel. Let it marinate for 5 minutes.
Julienne the carrot and cut the chives into 3cm pieces.
Pat the mackerel dry and coat with cornstarch.
Heat half of the salad oil in a pan over medium heat. Fry the mackerel for 2 minutes until golden brown, flip, and cook for another 2-3 minutes until crispy. Remove and set aside.
Clean the pan and heat the remaining salad oil. Stir-fry the bean sprouts and carrot for 2-3 minutes.
Add the sauce ingredients (water, chicken stock, sake, mirin, sugar, black vinegar, soy sauce) to the pan and bring to a boil. Add the chives and mix briefly. Stir in the cornstarch slurry to thicken the sauce.
Pour the sauce over the fried mackerel and serve.
