Slice the onion into 5mm pieces. Chop the cabbage and bell peppers into bite-sized pieces. Separate the shimeji mushrooms into small clusters.

Mix the sauce ingredients (sake, mirin, miso, chili paste, and garlic) in a bowl.

Heat butter on a hot plate or skillet. Cook the salmon on medium heat until both sides are browned, then remove. Wipe the skillet clean and add the vegetables. Cover and steam until the onion becomes translucent.

Return the salmon to the skillet, pour the sauce over, and sprinkle with green onions.
