    • 💧 Adequate water for kampyo soaking

    • 2 tbsp mirin
    • 🍬 3 tbsp sugar
    • 2 tbsp soy sauce
    • Full amount of kombu soaking liquid

Soak kampyo in adequate water with a pinch of salt for 3 minutes to soften.

Remove skin and bones from salmon, then cut into halves lengthwise.

Lay 4 pieces of kombu slightly overlapping, place salmon at the edge, and roll tightly. Secure with kampyo strips at 4 points. Repeat for 2 rolls.

Heat all seasoning ingredients in a pot until boiling. Add kombu rolls, reduce heat, cover, and simmer until kombu softens, adding water occasionally to prevent drying.
