INGREDIENTS
Dry Ingredients
- 6 cups all-purpose flour
- 5 tablespoons powdered milk
- 2 tablespoons instant yeast
- 2 tablespoons white sugar
- 🧂 1 tablespoon salt
Wet Ingredients
- 3 tablespoons unsalted butter, softened
- 💧 2 ½ cups warm water (120 to 130 degrees F/50 degrees C)
- 1 teaspoon vegetable oil
Paste Topping
- 💧 ¼ cup water
- 1 tablespoon all-purpose flour
- ½ teaspoon white sugar
- 1 tablespoon sesame seeds
STEPS
Whisk flour, powdered milk, yeast, sugar, and salt together in a large bowl. Add butter and mix with your hands until mixture resembles coarse crumbs.
Gradually add warm water to the flour mixture, using your hands to mix well. Knead the dough on a floured surface until smooth and elastic, about 8 minutes.
Lightly oil a large bowl with vegetable oil. Place the kneaded dough into the bowl, turn it to coat with oil, cover, and let rise in a warm place until doubled, about 1 hour.
Gently punch down the dough and divide it into 12 equal pieces. Shape each piece into a ball, cover, and let rest for 15-20 minutes.
On a floured surface, flatten each dough ball into a diamond-like shape. Place on greased baking sheets and allow to rest for at least 10 minutes while covered.
Mix the paste ingredients (water, flour, and sugar) in a small bowl. Brush the paste over the shaped dough and sprinkle with sesame seeds.
Preheat the oven to 450°F (230°C), then bake the flatbreads in batches until golden brown, about 7 to 10 minutes per batch.
