INGREDIENTS
Fish
- 220g filleted Pacific saury
Seasoning
- đź§‚ Pinch of salt and pepper
- 1 tbsp potato starch
Oil
- 1/2 tbsp salad oil
Sauce
- 1 tbsp sake
- 1 tbsp mirin
- 🍬 1 tsp sugar
- 1 tbsp soy sauce
STEPS
Pat dry the Pacific saury with a kitchen paper towel and cut into 3–4 pieces. Season both sides with salt and pepper, then coat with potato starch.
Heat salad oil in a frying pan over medium heat. Place the fish skin-side down and cook for about 2 minutes. Flip and cook for another 2 minutes.
Add the sauce ingredients (sake, mirin, sugar, soy sauce) to the pan and simmer until the fish is evenly coated.
