INGREDIENTS
Fish
- š 220g fresh sanma fillets
Vegetables
- 4 shiso leaves
- š§ 30g minced green onion
- 10g minced ginger
Condiments
- 1 tbsp miso paste
- 1/2 tbsp salad oil
STEPS
Trim the stems off the shiso leaves. Mince the green onion and ginger.
Remove the small bones and skin from the sanma fillets, then roughly chop them.
On the cutting board with the chopped sanma, add green onion, ginger, and miso paste. Mix and chop until the mixture becomes smooth and uniform.
Divide the mixture into 4 portions and shape them into ovals. Sandwich each portion between two shiso leaves.
Heat salad oil in a frying pan over medium heat. Place the sanma patties in the pan and cook until browned. Flip and cook the other side similarly. Cover with a lid and steam on low heat for about 2 minutes until cooked through.
