INGREDIENTS
Main Ingredients
- 5 pieces (300g) satoimo
- 3 slices ham
- 100g frozen edamame
- đź§‚ 1/3 tsp salt
- Pinch of pepper
- As needed salad oil
- As needed medium-thick sauce
Coating
- As needed all-purpose flour
- 🥚 1 egg, beaten
- As needed breadcrumbs
STEPS
Cut ham into 5mm cubes. Defrost edamame and remove beans from pods.
Peel satoimo and cut into bite-sized pieces. Sprinkle with a little salt and rub to remove sliminess. Wash thoroughly and drain. Place in a microwave-safe container, cover loosely with plastic wrap, and microwave at 600W for 5 minutes until tender.
Mash satoimo roughly in a bowl. Let cool slightly, then mix in ham, edamame, salt, and pepper.
Divide into 6 portions and shape into oval croquettes. Coat each in flour, beaten egg, and breadcrumbs in sequence.
Heat salad oil in a pot to 170°C. Fry croquettes until golden brown on both sides.
Serve croquettes on a plate and optionally drizzle with medium-thick sauce.
