INGREDIENTS
Rice
- 🍚 2 cups soaked rice
Fish
- 🐟 4 slices (300g) sea bream fillet
Vegetables
- 1/2 bunch mitsuba
- 30g ginger, julienned
Seasoning
- 🧂 Pinch of salt
- 10cm dried kombu
- 1 tbsp sake
- 2 tsp soy sauce
- 💧 400ml water
Cooking Oil
- Small amount of salad oil
STEPS
Cut mitsuba into 2cm pieces and julienne the ginger.
Pat dry the sea bream fillet with paper towels and sprinkle with salt.
Line a frying pan with aluminum foil, lightly coat with salad oil, and place the sea bream fillets. Cook over medium heat until browned on both sides.
Place soaked rice, seasoning ingredients, and water into a clay pot. Mix well and flatten the rice. Add kombu, the cooked sea bream, and julienned ginger on top. Heat on medium-high until boiling, then cover and cook on low heat for 12 minutes.
Turn to high heat for 30 seconds, then remove from heat and let steam for 10 minutes. Remove kombu, sprinkle mitsuba, and gently mix the rice.
