INGREDIENTS
Crust
- 10 graham crackers
- ½ cup walnut pieces
- ¼ cup confectioners' sugar
- 1 ½ teaspoons ground cinnamon
- ¼ teaspoon ground nutmeg
- 1 pinch salt
- 2 tablespoons unsalted butter, melted
Cheesecake Filling
- 2 pounds cream cheese at room temperature
- 🥚 4 eggs at room temperature
- 1 ½ cups white sugar
- ¾ cup sour cream
- ½ cup half-and-half
- ¼ cup sweetened condensed milk
- ¼ cup all-purpose flour
- 2 teaspoons vanilla extract
- 💧 1 quart boiling water, or as needed
STEPS
Preheat the oven to 325 degrees F (165 degrees C). Place parchment paper over the bottom of a 9-inch springform pan and seal the pan around the base. Grease the sides of the pan.
Pulse graham crackers, confectioners' sugar, walnuts, cinnamon, nutmeg, and salt in a food processor, making crumbs. Add melted butter and process until evenly darkened. Press into the pan as an even layer.
Clean the food processor and blend the cream cheese, eggs, sugar, sour cream, half-and-half, condensed milk, flour, and vanilla extract until smooth.
Pour cheesecake filling into the prepared springform pan and smooth the surface. Pop air bubbles with a paring knife.
Set a large roasting pan with boiling water in the oven. Place the cheesecake on the middle rack above the pan and bake for 1 hour.
Turn off oven heat and let the cheesecake rest inside for 1 to 2 hours.
Remove from oven, cool to room temperature, refrigerate overnight, and serve.
