INGREDIENTS
Meat
- 150g pork slices
Vegetables
- 6 shiitake mushrooms
- Chopped shiso leaves, as needed
Condiments
- Mayonnaise, as needed
Seasonings
- 🧂 A pinch of salt and pepper
- 1 tbsp cornstarch
- 1/2 tbsp salad oil
Sauce
- 1 tbsp sake
- 🍬 1 tsp sugar
- 1/2 tbsp soy sauce
- 1 tbsp oyster sauce
- 🧄 1/2 tsp grated garlic
- 🧈 10g salted butter
STEPS
Cut off the stems of the shiitake mushrooms and finely chop the stems.
Roughly chop the pork slices and mix them in a bowl with cornstarch, salt, pepper, and the chopped shiitake stems.
Dust the shiitake caps with cornstarch and stuff them with the pork mixture, creating a small indentation in the center.
Heat salad oil in a frying pan over medium heat, place the stuffed shiitake meat-side down, and cook until browned. Cover with a lid and steam on low heat for 4 minutes.
Add the sauce ingredients to the pan and coat the shiitake evenly while flipping them. Add mayonnaise to the indentation and sprinkle with chopped shiso leaves.
