INGREDIENTS
Main
- 🥚 3 eggs
- 1 pack (100g) shimeji mushrooms
- đź§… 2 green onions, sliced
- đź§„ 1/4 tsp grated garlic
- 1 tbsp sake
- đź§‚ Pinch of salt and pepper
- 1 tsp soy sauce
- 1 tbsp salad oil
Egg Mixture
- đź§‚ Pinch of salt
- 1 tbsp mayonnaise
STEPS
Trim the root of the shimeji mushrooms and separate them by hand. Slice the green onions diagonally into 2cm pieces.
In a bowl, crack the eggs and mix them with the salt and mayonnaise to create the egg mixture.
Heat salad oil in a frying pan over medium heat. Add the shimeji mushrooms and grated garlic, stir-frying until softened. Season with salt and pepper, then push to one side of the pan.
Pour the egg mixture into the pan and stir gently until semi-cooked. Combine with the mushrooms, then add sake and soy sauce, stirring briefly. Add the green onions and mix well.
