INGREDIENTS
Main Ingredients
- 1 piece (50g) mochi, cut into 4
- 🦐 100g peeled shrimp
- 1/2 piece (25g) mentaiko, cut into 4
- 🧀 30g pizza cheese
- 🥬 150g roughly chopped cabbage
- 1 tbsp vegetable oil
Batter
- 100g all-purpose flour
- 1 tsp dashi powder
- 💧 100ml water
- 🥚 1 egg
- 2 tbsp tempura bits
Toppings
- as needed okonomiyaki sauce
- as needed mayonnaise
- as needed bonito flakes
- as needed aonori (seaweed flakes)
STEPS
Pat the peeled shrimp dry with a paper towel.
Roughly chop the cabbage and cut the mochi into 4 pieces.
Cut the mentaiko into 4 pieces.
In a bowl, mix flour, dashi powder, and water. Add the egg, tempura bits, and cabbage, mixing gently to incorporate air. Add the shrimp and mix.
Heat vegetable oil in a frying pan over medium heat. Spread the batter into a round shape, leaving some batter aside. Add mentaiko and mochi on top, then cover with the remaining batter. Cook until golden brown.
Flip the okonomiyaki, add pizza cheese on top, cover with a lid, and cook on low-medium heat until the batter is fully cooked.
Serve on a plate and top with okonomiyaki sauce, mayonnaise, bonito flakes, and aonori.
