INGREDIENTS
Sauce
- 💧 1 tablespoon water
- 1 (14 ounce) can chicken broth
- ½ cup dry white wine
- 🧈 ¼ cup salted butter
- 🍋 2 tablespoons fresh lemon juice
- 🌿 2 teaspoons chopped fresh parsley
- 🧂 1 pinch salt
- 1 pinch ground black pepper
Pasta
- 1 (8 ounce) package linguine pasta
Shrimp Batter
- ½ cup all-purpose flour
- 🥚 3 large eggs
- 🍤 1 pound jumbo shrimp, peeled and deveined
- 2 tablespoons vegetable oil
STEPS
Mix cornstarch and water in a small bowl; set aside.
Bring chicken broth, wine, butter, lemon juice, parsley, salt, and pepper to boil in a saucepan over medium heat. Gradually add cornstarch mixture to thicken sauce and remove from heat.
Boil lightly salted water and cook linguine for 11 minutes until tender. Drain and keep warm.
Place flour in a shallow bowl. Beat eggs in another bowl. Coat shrimp first in flour, then in egg, and place unstacked on a plate.
Heat oil in a skillet over medium-high heat. Fry shrimp in batches for 2-3 minutes per side until opaque.
Add shrimp to sauce. Divide linguine onto plates and top with shrimp and sauce.
