INGREDIENTS
Pasta
- 🍝 1 (16 ounce) package linguine
Oil and Butter
- ¼ cup olive oil
- 🧈 ¼ cup butter
Garlic and Spices
- 🧄 6 cloves garlic, minced
- 🧂 ½ teaspoon salt
- ¼ teaspoon crushed red pepper flakes
Seafood
- 🍤 1 pound peeled and deveined medium shrimp
Liquids
- 🍷 ¾ cup white wine
- 🍋 ½ cup lemon juice
Herbs
- 1 tablespoon chopped fresh basil
- 1 tablespoon chopped fresh parsley
Vegetables
- 🍅 ½ pint grape tomatoes, halved
Cheese
- 🧀 2 tablespoons grated Pecorino Romano cheese
STEPS
Bring a large pot of lightly salted water to a boil. Cook linguine until tender yet firm to bite, about 11 minutes. Drain and transfer to a large bowl.
Heat olive oil and butter in a large skillet over medium heat until butter melts. Add garlic and cook for 2-3 minutes.
Add shrimp to skillet and cook, stirring frequently, for 4-5 minutes.
Stir in wine, lemon juice, basil, salt, and pepper flakes into skillet and cook for 1 minute.
Add halved grape tomatoes and cook for 1 more minute.
Toss cooked scampi with linguine and combine well. Sprinkle Pecorino Romano cheese and parsley and toss again.
