    • 150g grated lotus root
    • 🦐 150g peeled shrimp
    • 2 stalks chopped green onion
    • 1 tbsp sake
    • 🧂 Pinch of salt and pepper
    • 1 tbsp potato starch
  • Japanese Sauce

    • 1 tbsp sake
    • 2 tbsp mirin
    • 🍬 1 tsp sugar
    • 🧂 1/3 tsp salt
    • 1/2 tsp soy sauce
    • 1/3 tsp dashi powder
    • 💧 100ml water
  • Thickening Agent

    • 1/2 tbsp potato starch
    • 💧 1/2 tbsp water

Slice 4 pieces of lotus root thinly and soak in water. Grate the remaining lotus root. Chop green onions finely.

Remove the vein from peeled shrimp and chop finely. Mix all ingredients under 'Shrimp Shinjo' except sliced lotus root in a bowl. Divide into 4 portions and shape into rounds.

Heat 1cm of salad oil in a frying pan. Fry the lotus root slices until golden brown. Add shrimp shinjo and fry for about 5 minutes until golden brown.

In a pot, heat all 'Japanese Sauce' ingredients until boiling. Add the thickening agent and stir until the sauce thickens. Serve shrimp shinjo with sauce, garnish with fried lotus root slices and grated ginger.
