INGREDIENTS
Rice
- 🍚 300g cooked white rice
Seafood
- 🍤 6 peeled shrimp
Vegetables
- 🧅 1/2 onion, chopped
- 🍅 1/2 can diced tomatoes
- 🧄 1/2 tsp minced garlic
- Chopped parsley, to taste
Liquids
- 💧 300ml water
- 🥛 100ml milk
Seasonings
- 🧈 10g salted butter
- 1 tsp consomme powder
- 🍬 1/2 tsp sugar
- 🧂 1/2 tsp salt
STEPS
Chop the onion roughly. Remove the vein from the shrimp. Rinse the cooked white rice under running water to remove stickiness.
Heat water in a pot until boiling. Add shrimp and cook for about 1 minute until they turn white. Remove shrimp and skim off any foam.
Add canned tomatoes, chopped onion, minced garlic, and seasonings (consomme, sugar, salt) to the pot. Simmer on low heat for about 5 minutes.
Add butter and milk to the pot and mix well. Then add shrimp and rinsed rice, stirring to combine and heat through.
Serve the risotto in bowls and garnish with chopped parsley.
