INGREDIENTS
Dough and Binding
- 24 ounces pizza dough
- 🥚 1 large egg, beaten
Filling
- 🧀 2 cups ricotta cheese
- 12 ounces Italian sausage, casing removed
- 1 teaspoon ground black pepper
- 1 teaspoon red chili flakes, or to taste
- 🧅 1/2 cup green onions
- 🧀 1/2 cup pecorino Romano cheese, plus more to finish
STEPS
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
Roll the pizza dough out on a lightly floured surface into a 12x18-inch rectangle. Brush the entire surface of the dough with half of the beaten egg.
Scoop rounded tablespoons of ricotta cheese in a checkerboard pattern, spacing 1 1/2 inches apart, across the dough starting 3 inches from its top edge.
Add rounded tablespoons of sausage in the spaces between the ricotta scoops to alternate the patterns.
Season evenly with black pepper, red chili flakes, and salt. Scatter green onions and grate pecorino Romano cheese over the top.
Roll the dough from the bottom up, sealing the edge where it overlaps the plain dough. Ensure the seam is at the bottom.
Cut the roll into 12 equal portions, placing each piece cut side up on the prepared baking sheet. Brush the tops with the remaining egg and grate more pecorino Romano cheese on top.
Bake the sausage rolls in the preheated oven for 45-50 minutes until golden brown.
