INGREDIENTS

- 🍗 4 chicken wings (240g)
- 5 taro roots (300g)
Cooking Oil
- 1 tsp salad oil
Liquid
- 💧 250ml water
Seasonings
- 1 tbsp sake
- 1 tbsp mirin
- 🍬 1 tsp sugar
- 🧂 1 tbsp soy sauce
- 1/3 tsp dashi powder
- 2 slices ginger
STEPS
Peel the taro roots and cut them into bite-sized pieces. Rub with 1 tsp salt (not listed in ingredients) to remove the sliminess, rinse under running water, and drain.
Separate the chicken wings at the joints and make cuts along the bones.
Heat salad oil in a deep frying pan over medium heat. Place the chicken wings skin-side down and cook until browned on both sides. Add the taro and stir until coated with oil. Pour in water and bring to a boil, skimming off any foam.
Add all the seasonings (marked with ☆), cover with a drop lid, and simmer over low heat for about 20 minutes until the liquid reduces.
