Cut the daikon into 1cm slices after quartering it lengthwise. Thinly slice the green onion diagonally. Pit and roughly chop the umeboshi.

In a pot, bring water and daikon to a boil. Add sake and mirin, cover, and simmer on low heat for 5 minutes until the daikon softens.

Add green onion and umeboshi to the pot and cook over medium heat for 3 minutes.
