INGREDIENTS
Vegetables
- 600g winter melon, peeled and cut
- 2 pieces ginger, sliced and julienned
Protein
- 200g chicken thigh, cut into pieces
Seasoning
- 1 tbsp sake
- đź§‚ Pinch of salt and pepper
- 1.5 tbsp soy sauce
- 1 tbsp mirin
- 1/2 tsp dashi powder
- đź’§ 200ml water
Oil
- 1 tbsp salad oil
STEPS
Cut the winter melon into manageable pieces, remove seeds and peel.
Slice half the ginger and julienne the other half.
Cut chicken thigh into bite-sized pieces and marinate with sake, salt, and pepper.
Heat salad oil in a pan and sear chicken skin-side down until golden brown on both sides.
Add winter melon, sliced ginger, and seasoning ingredients. Bring to a boil, cover, and simmer on low heat for 15 minutes.
Serve in a dish and garnish with julienned ginger.
