INGREDIENTS

- 💧 1 cup boiling water, or as needed
- 🧂 ¾ cup white sugar, divided
- 💧 1 teaspoon water
- 🥚 6 large egg yolks
- 1 (14 ounce) can sweetened condensed milk
- 1 (13 ounce) can evaporated milk
- 1 teaspoon vanilla extract
STEPS
Preheat the oven to 325°F (165°C). Place a 9-inch metal pie dish into a deep baking pan and pour boiling water into the baking pan to create a water bath.
In a heavy saucepan, combine 1/2 cup sugar and 1 teaspoon water over medium heat. Swirl until the sugar dissolves and caramelizes into a golden-brown syrup, about 10 minutes. Pour the caramel into the pie dish and tilt to coat the bottom.
In a bowl, whisk together egg yolks, sweetened condensed milk, evaporated milk, remaining 1/4 cup sugar, and vanilla extract until creamy and well combined. Remove foam if needed. Pour the mixture over the caramel layer in the pie dish.
Cover the baking pan with aluminum foil and bake in the preheated oven until the custard is set but slightly jiggly, about 45 minutes to 1 hour.
Remove from oven and refrigerate the flan until chilled, approximately 2 hours.
Remove the pie dish from the water bath. Use a knife to loosen the edges of the flan. Invert onto a serving platter and let the caramel sauce drizzle over the top.
