INGREDIENTS

- 1 cup dried split peas
- 💧 5 cups cold water
- 🧅 ¼ cup diced onion
- ¼ cup thinly sliced celery
- 1 tablespoon ketchup
- 1 tablespoon extra-virgin olive oil
- 🧂 1 pinch coarse salt
- 🧄 2 cloves garlic, crushed
- 3 bay leaves
- 🥕 1 cup sliced carrots
- Ground black pepper to taste
STEPS
Inspect peas, discarding stones, foreign matter, or unattractive peas. Rinse peas thoroughly under cold running water.
Combine drained peas, water, onion, celery, ketchup, olive oil, salt, garlic, and bay leaves in a pot. Cover and bring to a boil, then reduce heat to a very slow simmer. Cook for about 1 1/2 hours, stirring every 7 to 12 minutes.
Add carrots into the soup and continue slow cooking, stirring often, until peas are dissolved and soup is thick, approximately 1 1/2 hours. Remove bay leaves and season with black pepper.
