INGREDIENTS
Sauce
- 🥛 1 ½ cups mayonnaise
- 🥛 ½ cup sour cream
- ¼ cup chopped fresh cilantro
- 🧅 ¼ cup diced green onions
- 1 ½ tablespoons chipotle chili powder
- 1 tablespoon garlic basil spread
- 1 tablespoon lime juice
- 1 teaspoon ground cumin
- 🧂 Salt and freshly ground black pepper to taste
Meat mixture
- 1 tablespoon olive oil
- 1 pound ground chorizo
- 🥩 1 pound ground beef
- 1 teaspoon ground coriander
- 1 head cabbage, chopped
- 1 green bell pepper, diced
- 1 yellow bell pepper, diced
- 1 orange bell pepper, diced
- 🌶 1 jalapeno pepper, seeded and minced
- 1 cup water
- ¼ cup brown sugar
- 2 tablespoons chili powder
- ¼ cup chopped fresh cilantro
- 1 lime, juiced
Sandwich
- 🥖 4 Italian-style hoagie buns, split lengthwise and toasted
- 1 tablespoon olive oil
- 🥚 8 eggs
STEPS
Mix mayonnaise, sour cream, cilantro, green onions, chipotle chili powder, lime juice, garlic basil spread, and cumin in a small bowl. Cover and refrigerate for at least 1 hour.
Heat olive oil in a pot and cook chorizo, ground beef, and coriander until browned. Drain fat and season.
Add cabbage, bell peppers, jalapeno, and water to the pot. Cook until softened and most water evaporates.
Mix brown sugar, chili powder, cilantro, and lime juice with the meat mixture and remove from heat.
Spread hoagie buns with chipotle mayo and divide the meat mixture evenly among the sandwiches.
Fry eggs in olive oil and top each sandwich with two eggs.
