INGREDIENTS
Main Ingredients
- 🥔 1 pound red potatoes, cut into 1-inch pieces
- 2 pounds green beans
- 2 pounds skinless, boneless chicken thighs
Seasonings
- 🧂 2 teaspoons salt
- 1 teaspoon ground black pepper
- 1/2 teaspoon red pepper flakes (optional)
- 1/2 teaspoon paprika
Other Ingredients
- 6 slices bacon
- 2 tablespoons minced garlic
- 2 cups chicken broth
STEPS
Set a 5-quart slow cooker to cook on the High setting.
Place red potato pieces in the bottom of the slow cooker. Place green beans on top of potatoes. Add salt, pepper, and red pepper flakes.
Cook bacon in a skillet over medium-high heat until crispy, about 10 minutes. Crumble and set aside.
In the same skillet, cook minced garlic for 30 seconds. Add to the slow cooker with the chicken broth.
Season chicken thighs with salt, pepper, and paprika on a foil sheet. Wrap the chicken in the foil to form a sealed packet.
Place the chicken packet on top of the vegetables in the slow cooker. Cover and cook on High for 4 hours or Low for 6 hours.
To serve, unwrap the chicken and transfer to a platter. Sprinkle crumbled bacon over the dish.
