INGREDIENTS
Protein
- 1 pound ground beef
Dairy
- 1 tablespoon butter
- 8 ounces plain Greek yogurt
- 4 ounces whipped cream cheese
Vegetables
- 8 ounces sliced mushrooms
Sauces and seasonings
- 1 can beef consomme (10.5 ounces)
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 tablespoon soy sauce
- 2 tablespoons beef broth
Grain/starch
- 3 3/4 cups egg noodles
STEPS
Heat a large skillet over medium-high heat. Cook and stir the ground beef in the hot skillet until browned and crumbly, about 5 to 7 minutes. Transfer ground beef to the slow cooker.
Add butter to the skillet, and cook mushrooms and onions until softened, about 3 minutes. Season with salt and pepper. Transfer mushroom-onion mix to slow cooker.
Pour consommé into slow cooker. Stir in tomato paste, Greek yogurt, whipped cream cheese, Worcestershire sauce, and soy sauce. Cover and cook on High for 4 hours.
Add dry egg noodles to slow cooker. Cover and cook until noodles are softened, about 30 minutes. Stir in beef broth as needed, 1 tablespoon at a time, if the stroganoff is too dry.
