INGREDIENTS
Meatballs
- 🥚 1 large egg
- 1/4 cup bread crumbs
- 🧅 1/4 cup onion
- 2 tablespoons finely chopped dried tomatoes
- 🥛 2 tablespoons milk
- 1 tablespoon grated Parmesan cheese
- 1 clove garlic, minced
- 1/2 teaspoon Italian seasoning
- 🧂 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 pound ground chicken
Sauce and Base
- 2 1/4 cups reduced sodium chicken broth
- 1/2 cup heavy cream
- 1/4 cup white wine
- 1/3 cup chopped dried tomatoes
- 1/2 teaspoon Italian seasoning
- 1 (5 ounce) package baby spinach
- 1/2 cup grated Parmesan cheese
STEPS
Gather all ingredients.
Preheat the oven to 375 degrees F (190 degrees C) and line a baking pan with parchment paper.
Combine egg, bread crumbs, onion, dried tomatoes, milk, Parmesan cheese, garlic, Italian seasoning, salt, and pepper in a bowl.
Add ground chicken and mix well. Shape mixture into 20 meatballs.
Bake meatballs for 15 minutes until set and lightly browned.
Add meatballs to a slow cooker with chicken broth, cream, wine, dried tomatoes, and Italian seasoning. Cover and cook on High for 3 hours or on Low for 6 hours.
If cooking on Low, turn to High. Add gnocchi and cook for an additional 20 minutes.
Stir in spinach and Parmesan cheese before serving.
