INGREDIENTS
Main Ingredients
- 🧂 2 ½ teaspoons kosher salt
- 1 (5 pound) boneless prime rib roast
Seasonings
- 5 tablespoons olive oil
- 2 tablespoons cracked black pepper
- 2 teaspoons garlic powder
- 2 teaspoons dried rosemary
- 2 teaspoons dried thyme
- 🧅 1 teaspoon onion powder
- 1 teaspoon paprika
- ½ teaspoon cayenne pepper
STEPS
Sprinkle salt over entire roast; wrap roast in plastic wrap and refrigerate for 4 hours to overnight.
Combine olive oil, black pepper, garlic powder, rosemary, thyme, onion powder, paprika, and cayenne pepper in a bowl and let sit for 1 hour to blend flavors.
Pour 3/4 of the oil mixture over roast, massaging into the meat. Flip roast and pour the remaining oil mixture; refrigerate for at least 1 hour or up to 12 hours.
Preheat smoker to 225° F and cook the roast with hickory or pecan wood chips for medium-rare, about 3 to 3.5 hours. Ensure the internal temperature reaches 130° F.
Preheat grill or oven to high heat at 500-550° F. Roast or grill the prime rib for 5 to 10 minutes to create a crunchy crust.
Rest the roast for 10 to 15 minutes before slicing.
