INGREDIENTS
Vegetables
- 🍅 8 ripe plum tomatoes
- 4 poblano peppers
- 4 Anaheim chile peppers
- 1 jalapeno chile pepper
- 1 large green bell pepper
- 🧅 1/4 onion
- 🧄 2 cloves garlic
- 2 tablespoons chopped cilantro leaves
Condiments / Seasoning
- 1 tablespoon vegetable oil
- 2 tablespoons white vinegar
- 🧂 2 teaspoons salt
- 1/4 teaspoon mesquite flavored liquid smoke concentrate (Optional)
STEPS
Preheat an outdoor grill to medium heat.
Rub tomatoes with oil and grill for 10 minutes, turning periodically. Place poblano, Anaheim, jalapeno chiles, and green bell pepper on the grill; grill 5-7 minutes per side until skins blister and brown. Remove tomatoes to a bowl and place peppers in an airtight container to steam while cooling.
Peel and drain tomatoes as needed. Peel and seed all peppers to prepare them for blending.
Place tomatoes, peeled peppers, cilantro, vinegar, onion, garlic, and salt into the food processor. Pulse 4-5 times and adjust with liquid smoke and jalapenos to taste. Blend to desired consistency.
