- 🍫 1 (15.25 ounce) package dark chocolate cake mix
- 🥚 3 large eggs
- 🥛 1 cup whole milk
- 🧈 ⅓ cup melted unsalted butter
- 1 tablespoon instant espresso powder
- 🌱 3 teaspoons vanilla extract, divided
- 🍫 1 (12 ounce) bag semi-sweet chocolate chips
- 🥛 1 ½ cups heavy whipping cream
- 🥚 5 large egg whites
- 🧂 1 ⅔ cups granulated sugar
- ½ teaspoon cream of tartar
- ¾ cup graham cracker crumbs, divided
- 10 small graham cracker rectangles
STEPS
Preheat the oven to 350°F (175°C). Line the bottom of two 9-inch cake pans with parchment paper and lightly spray with baking spray.
Combine cake mix, eggs, milk, butter, espresso powder, and 2 teaspoons vanilla extract in a mixing bowl. Beat until well combined. Divide batter evenly between pans.
Bake cakes for 25–30 minutes until a toothpick inserted in the middle comes out clean. Cool for 20 minutes on a rack, then remove and cool completely.
To prepare chocolate frosting, heat cream to a gentle simmer and pour over chocolate chips. Mix until smooth and let cool for about 1.5 hours until spreadable.
Prepare marshmallow frosting by combining egg whites, sugar, and cream of tartar. Heat over simmering water until sugar dissolves and mixture reaches 160°F (70°C). Beat until stiff peaks form.
Trim the tops of the cooled cakes using a serrated knife. Spread marshmallow frosting and sprinkle graham cracker crumbs between the layers and refrigerate.
Finish by frosting the cake with chocolate frosting. Pipe marshmallow rosettes and decorate with graham crackers.
Use a kitchen torch to brown marshmallow rosettes before serving.
