INGREDIENTS
Syrup
- 3 cups white sugar
- 2 cups water
- 🍋 ½ medium lemon, zested in large strips
- 3 (1/4 inch thick) slices peeled fresh ginger
- 🍋 1 teaspoon lemon juice
Dough
- 2 cups cake flour
- 1 tablespoon baking powder
- ¼ teaspoon salt
- 🧈 2 tablespoons cold unsalted butter, cut into chunks
- 🥛 ½ cup milk
For Frying
- 2 cups oil, or as needed
STEPS
Prepare the syrup by boiling sugar, water, lemon zest, ginger, and lemon juice in a saucepan over medium-high heat. Reduce heat and cook for 10 minutes. Cool to room temperature (30 to 45 minutes), then refrigerate for 8 hours to overnight.
Sift flour, baking powder, and salt into a bowl. Add butter and combine with fingertips until a cornmeal-like texture forms. Add milk and stir into a dough. Wrap in plastic wrap and let rest for at least 2 hours.
Roll rested dough out to a 5x14-inch rectangle and cut into 28 strips. Twist pairs of strips and pinch ends. Cover with a cloth and let rest for 15 minutes.
Heat oil to 350°F (175°C). Fry twisted dough strips in batches for 2 to 5 minutes until golden. Dip immediately into cold syrup for 10 seconds, then set aside to cool.
