INGREDIENTS
Egg Mixture
- 🥚 12 large eggs
- 🥛 2/3 cup milk
- 🧂 1/2 teaspoon salt
- 🧈 2 tablespoons butter
Meat and Seasonings
- 1 pound bulk pork sausage
- 2 tablespoons minced garlic
- 🧅 1/2 red onion, diced
- 🍅 1 tomato, diced
- 1/4 cup chopped fresh cilantro
- 1 (3.5 ounce) can diced jalapeños (Optional)
- 1 (1 ounce) package taco seasoning
Other Ingredients
- 1 1/2 cups shredded Cheddar cheese
- 20 (6 inch) flour tortillas
STEPS
Whisk together eggs, milk, and salt in a large bowl. Heat butter in a skillet over medium-high heat. Pour in egg mixture and cook, stirring, until eggs are completely set, about 5 minutes.
Break up cooked eggs into small pieces and transfer to a large bowl.
Heat the same skillet over medium heat. Cook sausage and garlic for 5 minutes. Add onion and cook until sausage is browned. Drain excess grease.
Combine sausage, eggs, tomato, cilantro, jalapeños, and taco seasoning in the bowl. Mix well and cool to room temperature. Stir in Cheddar cheese.
Place filling onto each tortilla, fold bottom edge, then fold in the sides. Roll into a burrito. Repeat for all tortillas.
Wrap burritos individually with plastic wrap and store in the freezer.
To serve, microwave burritos for 3 to 4 minutes until hot.
