Salad
- 1 5-ounce container mixed salad greens
- 🍗 1 cup cooked chicken
- 1 15-ounce can pinto beans
- 🌽 1 15-ounce can corn
- 🍅 1/2 cup cherry tomatoes
- 1/2 cup cotija cheese
- 🧅 4 thin slices red onion
- 2 tablespoons pumpkin seeds
STEPS
Prepare the vinaigrette: Place cilantro, olive oil, lime juice, honey, garlic, cumin, and cayenne in a blender or food processor. Pulse until well blended. For a creamy dressing, add Mexican crema. Season with salt and pepper.
Arrange the salad: Line a serving plate with mixed salad greens. Arrange chicken, pinto beans, corn, cherry tomatoes, cotija cheese, and red onion slices in an appealing layout.
