INGREDIENTS

- 🍳 2 teaspoons canola oil
- 🥚 2 eggs
- 💧 ½ teaspoon water
- 2 teaspoons sesame oil
- 🧅 ½ onion, diced
- 🧄 1 clove garlic, minced
- 🥕 ¼ cup frozen peas and carrots
- 🍚 2 cups cold cooked jasmine rice
- 1 tablespoon Sriracha sauce
- 🧂 2 teaspoons light soy sauce
- 🐟 1 teaspoon fish sauce
- 🍬 ½ teaspoon white sugar
- 🧂 ½ teaspoon salt
- ½ teaspoon ground white pepper
- ½ teaspoon monosodium glutamate (MSG)
- ¼ cup chopped green onion
- ¼ cup chopped fresh cilantro
- 🥒 1 cucumber
STEPS
Heat 2 teaspoons canola oil in a large wok or skillet over high heat until smoking.
Beat eggs and water together in a bowl until smooth. Pour beaten egg mixture into the skillet, scramble lightly until cooked and shiny, then remove to a plate.
Pour 1 teaspoon sesame oil and enough canola oil to cover the skillet. Sauté onion and garlic until fragrant, then add peas and carrots, cooking until hot.
Return cooked eggs to the skillet, add rice gradually, breaking up clumps and mixing with vegetables until light brown and fully hot.
Stir in Sriracha sauce, soy sauce, fish sauce, sugar, salt, white pepper, and MSG. Cook and stir until the rice is evenly coated.
Remove from heat. Sprinkle green onion and cilantro over the rice and toss. Arrange cucumber slices around the serving platter and serve with additional toppings as desired.
