INGREDIENTS
Syrup
- 4 fresh blackberries
- 1 teaspoon ancho chile powder
- ¼ teaspoon red pepper flakes
- 1 cup pure maple syrup
Chicken
- 2 pounds chicken tenders

- Salt and ground black pepper to taste
- ½ cup coconut flour
- ½ cup almond flour
- 1 teaspoon minced garlic
- 1 teaspoon smoked paprika
Waffles
- 2 ¼ cups gluten-free all purpose baking flour
- 1 tablespoon baking powder
- ½ teaspoon dried rosemary
- ½ teaspoon ground thyme
- ¼ teaspoon sea salt
- Cooking spray
- 🧈 1 stick butter, softened
- 1 tablespoon maple syrup
- 🧀 1 cup shredded sharp Cheddar cheese
- 🥚 3 eggs
- 1 ¾ cups almond milk
- ¼ cup blackberries for garnish
STEPS
Muddle 4 blackberries in the bottom of a microwave-safe serving jar. Add chile powder, red pepper flakes, and maple syrup. Stir briskly until combined.
Drizzle chicken tenders with orange juice in a shallow dish and season with salt and pepper. Refrigerate. In a separate bowl, whisk orange zest, coconut flour, almond flour, garlic, and paprika for dredging.
Mix gluten-free flour, baking powder, rosemary, thyme, and sea salt for waffle batter.
Preheat oven to 400°F (200°C) and waffle iron. Spray waffle iron with cooking spray.
Beat butter and maple syrup until creamy. Add eggs one at a time. Alternate adding gluten-free flour mix and almond milk. Stir in Cheddar cheese. Pour batter into waffle iron and cook until crisp and brown, 6-8 minutes per waffle. Keep warm in oven.
Line a baking sheet with parchment paper. Dip chicken tenders into dredging mixture. Place on the baking sheet.
Bake chicken for 20 minutes, flipping halfway through. Ensure internal temperature reaches 165°F (74°C).
Microwave syrup for 1 minute until warm. Top waffles with chicken tenders, garnish with blackberries, and drizzle with spicy syrup.
