INGREDIENTS
Noodles
- 2 servings fresh kalguksu noodles
Seasoning
- 2 tbsp gochujang
- 1 tbsp doenjang
- 1.5 tbsp beef stock powder
- đź§„ 1 tbsp minced garlic
Vegetables
- 🥒 1 zucchini, sliced
- 🥔 2 potatoes, diced
- đź§… 1.5 onions, chopped
- 🥕 0.5 carrot, sliced
- đź§… 2 stalks green onion, chopped
Garnish
- 🥚 2 eggs, beaten
- 1 cup seaweed flakes
- Sesame seeds, to taste
STEPS
Prepare zucchini, potatoes, onions, carrots, and green onions by slicing and chopping them.
Bring water to a boil and dissolve 2 tbsp gochujang and 1 tbsp doenjang.
Add 1.5 tbsp beef stock powder and adjust with an additional 0.5 tbsp if needed.
Add 1 tbsp minced garlic to the boiling broth.
Add diced potatoes and let them cook until tender.
Add zucchini, carrots, and onions to the pot and let them simmer.
Beat 2 eggs and pour them into the pot for a creamy texture. Optionally, add sliced chili peppers for extra spice.
Loosen fresh kalguksu noodles in cold water and add them to the pot. Cook until the noodles are tender.
Add chopped green onions and garnish with seaweed flakes and sesame seeds before serving.
