INGREDIENTS
Meat
- 200g sliced lamb
Vegetables
- 200g cabbage
- 100g maitake mushrooms
- 100g bean sprouts
- 50g green onion
Aromatics
- 1 piece ginger
- 1 clove garlic
Oil & Spices
- 1 tbsp sesame oil
- 2 dried chilies
- 1 tsp Sichuan peppercorns
Noodles
- 30g vermicelli noodles
Soup Base
- đź’§ 500ml water
- 1 tbsp sake
- 🍬 1 tsp sugar
- 2 tsp soy sauce
- đź§‚ 1/4 tsp salt
- 1/2 tsp chicken stock powder
- 1 tsp doubanjiang
Cilantro Sauce
- 20g cilantro
- 1.5 tbsp vinegar
- 1.5 tbsp soy sauce
- 1 tsp sesame oil
STEPS
Prepare all ingredients by slicing lamb, chopping vegetables, and mincing garlic and ginger.
Heat sesame oil in a pot over medium heat and sauté garlic, ginger, chilies, and Sichuan peppercorns until fragrant.
Add lamb slices and cook until lightly browned.
Pour in water and add all soup base ingredients. Bring to a boil.
Add cabbage, maitake mushrooms, bean sprouts, green onion, and vermicelli noodles. Simmer for 10 minutes.
Prepare cilantro dipping sauce by mixing cilantro, vinegar, soy sauce, and sesame oil in a small bowl.
Serve the hot pot warm and enjoy with the cilantro dipping sauce.
