INGREDIENTS
Protein
- 🍗 1 piece (250g) chicken breast
Vegetables
- 🍆 3 pieces (240g) eggplant
- 🍄 1 pack (100g) shimeji mushrooms
Seasoning
- 1 tbsp sake
- 1 tbsp potato starch
- 1 1/2 tbsp salad oil
- 🍬 1 tsp sugar
- 1/2 tbsp miso
- 1 tbsp gochujang
STEPS
Cut the chicken breast in half lengthwise, then slice diagonally into bite-sized pieces.
In a bowl, mix the chicken with sake and potato starch, massaging well.
Cut off the eggplant stems and slice diagonally while rotating (random cuts). Trim the shimeji mushroom roots and separate into smaller pieces.
Heat 2/3 of the salad oil in a frying pan over medium heat. Add eggplant and shimeji mushrooms, stir until coated with oil. Cover and steam for 2-3 minutes, then remove.
Add the remaining salad oil to the pan and cook the chicken until its color changes. Return the eggplant and mushrooms to the pan, stir briefly, then add the seasoning mixture. Stir until evenly coated.
