INGREDIENTS
Main Ingredient
- 500g cockles
Seasoning
- 4 tbsp soy sauce
- 1 tbsp light soy sauce
- 1 tbsp rice wine
- 1 tbsp sesame oil
- 1 tbsp sesame seeds
- 1.5 tbsp chili powder

- 🍬 1/2 tbsp sugar
Cooking Liquid
- 3 tbsp rice wine
- 1 tbsp vinegar
Cleaning
- đź§‚ 1 tbsp coarse salt
STEPS
Rinse cockles under running water multiple times to clean them.
Soak cockles in salted water with a steel spoon for 1 hour to remove impurities.
Scrub the shells thoroughly using a brush or gloves, depending on preference.
Boil water and add rice wine and vinegar. Cook cockles until they start opening their shells.
Drain cockles and use the boiled water to rinse the cockle meat for extra cleaning.
Mix soy sauce, light soy sauce, rice wine, sesame oil, sesame seeds, chili powder, chopped green onion, and sugar to prepare the seasoning sauce.
Place cockle meat on shells or a plate and drizzle the seasoning sauce on top.
