INGREDIENTS
Base
- 3/4 cup all-purpose flour
- 🥑 1/2 cup avocado oil
- 2 tablespoons vegetable oil
Proteins
- 🌭 8 ounces andouille sausage
- 🦃 1 1/2 pounds turkey meat
Vegetables
- 🧅 2 cups onions
- 1 cup green bell pepper
- 1 1/2 cups celery
- 1/2 cup green onions
- 1/4 cup chopped Italian parsley
Seasoning
- 2 teaspoons kosher salt
- 1 teaspoon ground black pepper
- 1/2 teaspoon cayenne pepper
Liquid
- 8 cups turkey or chicken broth
STEPS
Preheat the oven to 350°F (175°C). For roux, stir flour and avocado oil together in a small baking dish until smooth.
Bake roux in the preheated oven, stirring occasionally, until it is a dark caramel color, 60 to 90 minutes. Stir well, and set aside.
Add vegetable oil to a large pot over medium-high heat, then brown sausage and remove.
Add onions and salt, cook until translucent. Add bell pepper, celery, black pepper, and cayenne, cooking until softened.
Sprinkle in flour, cook until toasted and sticking to the bottom of the pan, then stir in prepared roux.
Add broth and sausage, stir and bring to a simmer. Reduce heat and cook for 30 minutes.
Add turkey, simmer for another 30 to 40 minutes. Skim fat off the surface if needed.
Reduce heat to low, stir in parsley and green onions. Cook for 5 minutes, adjust seasoning and serve with rice.
