INGREDIENTS
Vegetables
- 1 package (10 ounces) frozen spinach, thawed and drained
- 🥔 6 medium potatoes
- 🧅 1/4 cup green onion
Dairy & Alternatives
- 1/4 cup light sour cream
- 1/4 cup silken soft tofu
- 🧀 1/2 cup low-fat cheddar cheese, grated
Seasonings
- 1/4 teaspoon ground black pepper
- 1 teaspoon salt free seasoning
STEPS
Wash hands with soap and water.
Thaw the spinach and drain any extra water from it.
Preheat the oven to 350°F.
Wash and scrub the potatoes.
Bake the potatoes for 1 hour until tender and pierced easily with a fork.
Wash and chop the green onion until you have 1/4 cup.
Mix sour cream, tofu, spinach, green onion, pepper, and cheese together in a bowl.
Let the baked potatoes cool, scoop out the inside with a spoon, and mix it into the sour cream mixture.
Stuff the potato skin shells with the mixture and sprinkle with seasoning.
Bake the stuffed potatoes for 20–25 minutes until slightly browned. Optionally, add extra cheese on top.
