Cut cabbage into bite-sized pieces, slice green onion diagonally into 1cm widths, trim and separate shimeji mushrooms, and cut tofu into quarters.

Clean the squid by removing the innards, cartilage, and beak. Slice the body into 2cm rings and cut the tentacles into manageable lengths.

Add all seasonings (water, sake, mirin, soy sauce, salt, dashi powder) to a pot and bring to a boil. Add cabbage, green onion, and mushrooms, cover, and simmer for 5 minutes. Then add squid and tofu, cover, and simmer for another 4 minutes until squid is cooked.
