INGREDIENTS
Base
- 🍚 1 bowl cooked rice (200g)
Seafood
- 🦑 1 cleaned squid body (120g)
Coating
- Tempura flour for coating, as needed
- Salad oil for frying, as needed
Tempura Batter
- 4 tbsp tempura flour
- đź’§ 3 tbsp water
Sauce
- đź’§ 3 tbsp water
- 1/2 tbsp mirin
- 🍬 1/2 tbsp sugar
- đź§‚ 1 tbsp soy sauce
STEPS
Remove the fins from the squid body. Open the body and peel off the skin, then cut into three vertical strips.
In a pot, combine the sauce ingredients (water, mirin, sugar, soy sauce) and bring to a boil. Simmer over medium-low heat until slightly thickened.
In a bowl, mix the tempura batter ingredients (tempura flour and water) until smooth.
Lightly coat the squid strips with tempura flour.
Heat salad oil in a pot to 170°C (340°F). Dip the squid into the batter and gently place into the oil. Fry until crispy and golden.
Serve the cooked rice in a bowl, top with the fried squid, and drizzle the sauce over.
