INGREDIENTS
Vegetables
- 🥬 1/4 head cabbage
- 🍆 2 eggplants
Meat
- 150g ground pork
Seasonings
- đź§„ 1 clove garlic, minced
- 3 tbsp sesame oil
- 1 tbsp sake
- 1 tbsp mirin
- 1 tsp soy sauce
- 1 tbsp miso
- đź’§ 3 tbsp water
Thickening Agent
- 1/2 tbsp cornstarch
- đź’§ 1/2 tbsp water
STEPS
Cut the cabbage and eggplants into bite-sized pieces. Mince the garlic.
Heat sesame oil in a frying pan, add the eggplants, and fry for 2–3 minutes over medium heat, turning occasionally. Remove and place on a paper towel-lined plate.
In the same pan, add garlic and sauté until fragrant. Add ground pork and cook over medium heat until the meat changes color. Add cabbage and stir-fry until softened.
Add the seasoning mixture (sake, mirin, soy sauce, miso, and water) and bring to a boil.
Add the cornstarch slurry (cornstarch and water) and cook until the sauce thickens. Return the eggplants to the pan and mix well.
