INGREDIENTS
Vegetables
- 🍆 2 medium eggplants (160g)
Seafood
- 1 can mackerel in water (190g)
Condiments
- 2 tbsp ponzu sauce
- Pinch of pepper
Oils
- 1/2 tbsp sesame oil
STEPS
Cut off the stems of the eggplants, slice them in half lengthwise, and then cut into thin diagonal slices.
Heat sesame oil in a frying pan over medium heat. Add the canned mackerel and stir-fry gently to break it apart.
Add the sliced eggplants and stir-fry over medium-low heat for 2–3 minutes until softened.
Add ponzu sauce and pepper, then stir-fry to combine evenly.
