INGREDIENTS
Vegetables
- 🍆 Medium-sized eggplants, 2 pieces
Seasonings
- Soy sauce, 2 tablespoons
- Miso, 2 tablespoons
- Sugar, 1 tablespoon
- Mirin, 1 tablespoon
- Vegetable oil, 1 tablespoon
STEPS
Cut the eggplants lengthwise into 6-8 slices. Soak them in water for about 10 minutes to remove bitterness, then pat dry with paper towels.
Heat vegetable oil in a frying pan and stir-fry the eggplants over high heat.
Mix soy sauce, miso, sugar, and mirin together. Add the seasoning mixture to the pan and continue stir-frying.
Once the seasoning is evenly blended, turn off the heat and plate the dish.
