- Pork 200g (thinly sliced)
- 🥚 Eggs 2 pieces
- Eggplant 1 piece
Seasonings
- Soy sauce 1 tablespoon
- Sugar 1 teaspoon
- Sesame oil 2 teaspoons
STEPS
Cut the eggplant into bite-sized pieces and soak in water for 5 minutes to remove bitterness.
Cut the pork into bite-sized pieces. Beat the eggs and prepare them for cooking.
Heat sesame oil in a frying pan, stir-fry the pork, and take it out once cooked.
Using the same pan, stir-fry the eggplant until slightly soft, then return the pork.
Add the beaten eggs and stir-fry while mixing everything. Season with soy sauce and sugar before finishing.
