INGREDIENTS
Crust
- 2 ½ cups all-purpose flour
- 2 teaspoons white sugar
- 1 teaspoon salt
- 🧈 ½ cup cold unsalted butter, cubed
- ½ cup cold vegetable shortening
- 💧 ½ cup ice cold water
Strawberry Compote
- 🍓 4 cups hulled and quartered fresh strawberries
- 1 cup white sugar
- 🍋 ½ cup lemon juice
Lemon Filling
- 💧 1½ cups water
- 1⅓ cups white sugar
- ½ cup cornstarch
- ¼ teaspoon salt
- 🥚 5 egg yolks
- 🍋 ½ cup lemon juice
- 🧈 3 tablespoons butter
- 2 tablespoons lemon zest
Meringue Topping
- 🥚 6 egg whites
- ¼ teaspoon cream of tartar
- 3 tablespoons white sugar
STEPS
Whisk flour, sugar, and salt together for the crust. Add butter and shortening and mix until pea-sized crumbs form. Add water gradually and combine until a dough forms. Refrigerate for 1 hour.
Preheat the oven to 400°F (200°C). Roll and line pie crust, then weigh it down with weights. Bake for 15–20 minutes, remove liner and bake another 15–20 minutes.
Cook strawberries, sugar, and lemon juice in a saucepan over medium heat for 10–20 minutes. Remove from heat.
Heat water, sugar, cornstarch, and salt over high heat until thickened. Whisk in egg yolks, lemon juice, butter, and lemon zest until combined and thick.
Pour lemon filling into baked crust and top with strawberry compote.
Whip egg whites. Add cream of tartar and sugar until peaks form. Cover pie with meringue completely.
Bake pie at 300°F (150°C) for 45 minutes. Use blow torch to brown peaks. Cool before serving.
